As a mother of 2 children one of which has autism, I never focused on myself. I mean never. Until this past Febuary I had not been to a doctor in nearly 10 years. I avoided doctors like the plague. Reason being I knew I was obease and so far from healthy it wasn't funny. In January and Febuary my health started to take a nose dive. I started having issues with my blood pressure. I started having dizzy spells, to the point I nearly fainted in Target with my children in tow. I realized I need to get my butt into the doctor. I needed to have tests run so I could see how bad things were. I needed to start putting some of my needs first so I could be around to take care of my children.
In late Febuary 2012, I finally went to the doctor. Reality hit me in the face when I got on the scale. I weighed a little over 260 lbs. The doctor ran a bunch of tests that concluded I was borderline diabetic and very close to being put on blood pressure medication. Right then and there I decided this is ENOUGH. I am taking my life back and I am getting healthy. I joined the Y and adopted a heathy diet. I started to workout 5 to 6 days a week.

Fast forward a bit to April 2012. In April I fell in love with running. I started to do 5k's like crazy. My total is 10 at this point. Through my races I met some people and joined a running club. This September I ran and completed my first half-marathon that is 13.1 miles.
I went from 260+ lbs and because of my new healthy lifestyle I have lost a little over 50 lbs. I am close to breaking my under 200 lbs milestone. I love the way I feel. The thing I enjoy the most about my new life is that I get to share it. I love speaking to people about how I got to where I am now. Setting Goals

When I started this journey I had a goal in mind and that was to lose weight. I am doing that I have lost a little over 22 pounds. I am excited to be taking some of this fat off. I also want something to shoot for, so I have decided to do three 5K's this spring and summer. I am doing the Young Life 5k on April 28th, the 5K for the Autism Society of Michigan, and C.H.U.M's (the place Major has his horse therapy at) 5K in June. I am also taking a big leap and will start training next week for my first ever half marathon in September.

Winning at Losing

Today was weigh in day for me. After walking up to the first 2 of 3 scales and the computer crashing, I was feeling like this weigh in might not be a good one. I was wrong. I had my best weigh in since starting a month ago. I am down 4.8 pounds this week. Total weight loss for the 4 weeks is 9.2 pounds. I am proud of myself for sticking with it. Thank You God for giving me the drive and determination to keep going on the hard days.

My Wake Up Call

My wake up call happened about a month a go.  I had been having dizzy spells that I thought were blood pressure related. I decided it was time to see a doctor, it had been nearly 10 years since I really saw a GP.  First he told me I was seriously over weight (which I knew but was in denial). He then ran a lot of blood work and told me I was pre-diabetic. The doctor said I need to drastically cut down on my pop intake or give it up entirely. It has been a month with out pop and I am pretty darn proud of my self. I am also working out an average of 5 to 6 days a week at the Y. I am also eating a better diet with lots of veggies (yes I said veggies). I am cooking things like eggplant and asparagus and actually liking them. I have come to a realization that I need to get healthy. I believe not taking care of my health is a dis-service to my family. With God's grace and help I will become a better me.

Roasted Asparagus

**I found this recipe at Food.com. Food.com is a great website for recipes. They list the nutrition facts at the end of each recipe, so any people using Weight Watchers can easily figure out your points plus.**

Roasted Asparagus

Ingredients:
  • 1 lb asparagus
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon table salt

Directions:
  • Preheat oven to 425 *f
  • Cut off the bottom (woody part) of the asparagus spears and discard
  • Place on foil-covered baking sheet and drizzle with oil
  • Sprinkle with salt
  • Roll asparagus around, so they are evenly covered with oil/salt
  • Roast for 10-15 mins., depending on the thickness of the stalks and how tender you like them
  • They should be tender when pierced with the tip of a knife
  • Tips of the asparagus will get very brown but watch them so they do not burn
**Weight Watchers Points + 2 per serving

Fried Eggplant

Trying to eat more veggies. I experimented with the eggplant and it turned out good. Even my 5 year old little girl likes it. Hope you enjoy it!!

Ingredients:

  • medium eggplant (smooth and as little wrinkles as possible)
  • 2 cups of flour
  • 3 large eggs
  • garlic powder
  • parsley flakes
  • onion salt
  • all spice
  • canola oil

Directions:

Take a large skillet and put a good amount of canola oil in it (use you own discretion on amount). Turn stove top on and let it heat for a few.
Place 2 cups of flour in a mixing bowl. Mix in a dash of garlic powder, parsley flakes, onion salt, and all spice. Set flour mix aside.
Beat 3 large eggs in bowl and set aside
Wash eggplant in water. Cut off both ends. Slice eggplant into circles.
Place circles into egg and then thoroughly coat in flour.
Place breaded circles into the hot skillet. Flip the circles with in a few seconds of placement. Flip again.
Remove eggplant circles, place on a plate, and enjoy.

Serving Size: two 3 inch diameter eggplant circles.

Chicken Enchilada (Tamale) Bake

Sharing a favorite recipe I recently found. I take no credit for coming up with this recipe. It is delicious!!

Chicken Enchilada (Tamale) Bake:

Ingredients:

  • 1/4 cup of shredded reduced fat Mexican cheese blend
  • 3/4 cup of shredded reduced fat Mexican cheese blend
  • 1/3 cup of skim milk
  • 1 large egg, beaten lightly
  • 1 teaspoon ground cumin
  • 1/8 teaspoon ground cayenne pepper
  • 1 (14.75 oz) can of cream of corn
  • 1 (8.5 oz) box of corn muffin mix
  • 1 (10oz) can enchilada sauce
  • 2 cups of cooked shredded chicken breast

Directions:

  • Preheat oven to 400 degrees. Lightly coat 9x13 baking dish with cooking spray and place aside.
  • In a large mixing bowl, mix together 1/4 cup of the Mexican cheese, milk, egg, cumin, pepper, corn, and corn muffin mix until combined.
  • Pour mixture into already greased baking dish and bake for 15 to 20 minutes until it is set or an inserted toothpick comes out clean.
  • Take a fork and poke holes all over the corn cake.
  • Pour the enchilada sauce all over the surface of the cake. Spread it with a spatula if necessary.
  • Place the shredded chicken evenly across the top of the cake.
  • Sprinkle the remaining 3/4 cup of shredded Mexican blend cheese across the chicken.
  • Place the dish back in the oven and bake for another 15 minutes. Let it cool for about 5 minutes.
Yields 8 servings.

Dear Special Needs Parent

Dear Special Needs Parent,

I believe being a parent to a child with special needs is the hardest job on the planet. We usually put our needs and wants on the back burner in order to help our children succeed in life. I am writing you today to provide a wake up call. Take some time for yourself. Stress for a special needs parent is often unimaginable, take time to try to de-stress. Most important thing, take care of yourself health wise. See a doctor on a regular basis. As our job is the hardest on the planet, it is also (in my opinion) the most important. We need to do everything in our power to take care of ourselves so we can be around as long as God sees fit.

Welcome Message

I'm a stay at home mommy of 2 beautiful special needs children. The past nine plus years I have not taken care of my self, but recently I have had a wake up call. I still am focusing an exhausting amount of time and energy on my children. That said, I am Taking Back Mommy (or at least some of me). I am getting fit and healthy. With God's help I will come through this all a better person. This blog is dedicated to my journey.
